Personally going with the GK 3 from Georgia. Cannot pronounce his surname so I will use his first name Luka.
On a side note, I am finding the Sportsdeck information and guide a cross between hilarious and mickey mouse. The links between pages have not been checked and often you get AFL information when clicking on things like scoring or team selection. If you open your team page and click on Help top right you get a page with options. Click on Trades and that is linked to AFL information. But if you then click on the Back To Help tab it takes you to Euro 2024 information.

That's who I am using, he was my first player selected. 
Figure they won't make it out of the group, so unless they cop some horrible injury luck / cards across their 3 matches to their other keepers, he should be a pretty safe late donut.
I'm expecting my team will end up fairly generic, but I don't know enough about the various players to do much else.
