Only 2 things initially spring to mind in this scenario:
1. You may lose an important league match if your volatile player goes low on a particular week. If you have too many of these guys you may not generate enough wins during the season if you get unlucky. Conversely, you could smash teams as well and end up first with high percentage if you play the right teams on the right week!
2. Cash loss/generation. If your volatile player plays REALLY well for weeks in a row (like Cloke for the Dimmawits), then you have earnt yourself some handy cash and can bring in another player who'll average the same as Cloke for the season or better, making some important $$$. If your volatile player plays poorly for weeks in a row, you'd have to ride the wave to save yourself burning trades and wait for him to even out.
I think in a risk/reward sense there is a case for having some of these volatile players. For your sanity though I wouldn't run with too many of these types! If they play 22 games at the same average as Mr. Consistent then you certainly haven't lost out.
